Mimi Council opened Dessert’D Organic Bake Shop (formerly known as Mimi’s Cookie Bar) in September 2011, and it’s been growing ever since. Mimi is a self taught baker that loves sweets just as much as living an active and healthy lifestyle. Her recipes represent the kind of life she lives with minimal and organic ingredients. And, Mimi and her desserts have been featured in SHAPE Magazine, Green Wedding Shoes, 100 Layer Cake and Wedding Chicks, among others. When Mimi isn’t baking, she enjoys snowboarding, hiking, running and spending time with her dog and husband in the amazing mountains she calls home.
Mimi found herself in California after she graduated early from high school and drove cross-country to Mammoth Lakes, CA the very next day. Living on her own at seventeen, Mimi was cut off from her parents because she decided against college and was pursuing a competitive snowboarding career at the time. After a winter of snowboarding and living in the mountains, Mimi moved to Huntington Beach, CA. She ended up landing what she thought was her dream job, working for Roxy. Mimi stayed with Roxy over five years, holding multiple positions within sales and merchandising & design. Being on her own, and with no one to tell her not to, Mimi baked cookies all the time, but with organic ingredients. She started sharing her cookies with friends, roommates and work, and realized her true passion for creating delicious organic desserts. So, she quit her job at Roxy and found herself back in the mountains of Mammoth Lakes and Dessert’D Organic Bake Shop was born.
Mimi’s love for cookies came from her YiaYia (which means Grandma in Greek). All throughout her childhood Mimi stuffed her face full of as many cookies as she could before her healthy Mom stopped her. Growing up in a very strict and healthy household taught Mimi that it’s all about balance. Now, staying active and enjoying dessert every day go hand in hand, as long as there’s a cookie in one of those hands.
