Air Fryer Chicken Strips

When we moved from Chicago to Michigan, one of the benefits was that we belonged to KCC (Kalamazoo Country Club). In Chicago, country clubs were very expensive. So, instead of belonging to one, we were members of Aqua Pool Club, Beverly Hills Tennis Club, and a golf club I can't remember the name of. It was more cost effective to belong to three different specific clubs than the one country club that had all activities. My best friend and next door neighbor, Celeste, on the other hand - belonged to Beverly Country Club. This was the nicest one, in my opinion; better than Ridge Country Club. (And this is the opinion of a 7 year old, mind you).


I loved going to the country club with her, it was one of my favorite things to do and I think I personally used all her guest invites each summer. They only had one pool at Beverly Country Club, and my pool club had 4. But, it wasn't the pool that I loved - it was the snack bar. And my pool club had a snack bar too, of course. But, at Beverly Country Club you didn't have to pay for your snacks, you just gave them a number! It made swimming and eating so easy! No worrying about where my cash was, bringing it in my wet and soggy hands to the snack bar, and holding it while I ate my snacks. This was what I loved so much about the country club. The ease of eating snacks, haha.

So, when we finally belonged to our own country club upon moving to Michigan, I was super excited. I was ten years old and I knew how they worked, I had years of experience under my belt. And I was ready for my first summer at KCC. I have vivid memories of hanging at the pool and snack bar. Some of my favorite snacks were Fruit Bowls, Strawberry Fro Yo, and Chicken Strips. I loved walking up to order and just telling them my number, it was so cool! And so easy! And KCC made the best Chicken Strips. They always served them in a basket on top of parchment paper. They were always sprinkled with fresh parsley and had a side of ketchup.


Since we recently got an air fryer, Delaney and I decided to make our own chicken strips. We make a lot at a time, and then reheating them is very easy and we have snacks or meals for a few days. So today I'm sharing a recipe for these really easy Air Fryer Chicken Strips.


Tips for making the best Air Fryer Chicken Strips


• You can buy boneless skinless chicken strips or you can also buy breasts and then cut them into strips. Either way will work!

• Make sure to coat the chicken in the bread crumbs/flour mixture completely. If you have bare spots, then they won't be golden brown.

• Canola oil cooking spray is completely necessary for this recipe. The chicken strips have to be completely coated, and spraying them is the easiest and best way to get them perfectly golden brown.

• Make sure to air fry until they are golden brown before flipping. This may take a couple more minutes, depending on your air fryer, so just look at the chicken strips.

Air Fryer Chicken Strips

Makes 4 to 6 servings


2 pounds organic boneless skinless chicken strips

113 grams (1 cup) organic Panko bread crumbs

64 grams (1/2 cup) organic all purpose flour

1/2 teaspoon organic garlic powder

1/4 teaspoon organic onion powder

Salt and pepper

1 organic large egg

1 tablespoons organic avocado oil

organic canola oil cooking spray


organic fresh parsley for serving


Method

In a large bowl, add the bread crumbs, flour, garlic powder, onion powder, and a good amount of salt and pepper. Mix together to combine completely.


In a medium bowl, add the egg and avocado oil and whisk together.


Prepare your air fryer basket and spray the basket with canola oil cooking spray.


Dip the chicken into the egg mixture, then coat it in the bread crumb mixture, then place in the air fryer basket. Repeat until the basket is full. (I had to do 2 baskets). Spray the coated chicken with canola oil cooking spray so they are completely coated on the top.


Place the basket into the air fryer and airy fry at 400°F for 10 to 12 minutes, or until the tops are golden brown. Remove basket and flip chicken strips, spray the tops with canola oil cooking spray and air fry for another 10 to 12 minutes or until golden brown.


Remove from the airy fryer, and repeat with remaining chicken.


Serve with fresh parsley.
