It is so hot in Mammoth right now, no joke. We have been having weather in the 80s and that usually is rare for us, but it's been weeks of it! And I'm ready for it to cool down a bit as I haven't wanted to turn my oven on at all! But, I still want cookies! What do you guys do for sweets when it's too hot to bake? Do you indulge in ice cream, ice cream bars, popsicles, cold beverages, no bake desserts? What's your fave? Tell me, as I want to know! Because for me, I am always all about the cookie - no matter how hot it is, haha.
So, I have resorted to purchasing some of my favorite store bought cookies for those days when I don't want to turn the oven on. Yes, I still buy cookies once in a while! Especially the nostalgic ones like Newman's Own O's (which are yes, basically just organic Oreos!). I used to buy these Newman's Own O's all the time when we lived down South and was able to go to Mother's Market on the regular. I love that they have all kinds of flavors like original, vanilla, mint, ginger... I love them all! You can find the vanilla ones I used for this recipe here.
Ice cream is also a go to when it's just so hot outside. There's nothing better than ice cream on a hot day! My favorite brand and what we serve at the bake shop is Straus Organic Creamery. Their ice cream is just the best, plain and simple. I've eaten a lot of ice cream in my life, and theirs just takes the cake! Now, I'm not really a vanilla girl - never have been. Chocolate is my go to, Mint Chocolate Chip is usually a close second (and Straus Organic Creamery's Mint and Chocolate are so good!). But, their Vanilla Bean is insane! And I am not even exaggerating one bit when I say that. I legit enjoy eating a bowl of plain old Vanilla Bean ice cream if it's Straus! And that is saying a lot, coming from me. So next time you see Straus at the store, get it! You will be so happy you did.
It is peach season right now, and they are going off! They've been so good lately, I love it! Otto has also been loving it, he loves peaches. If you didn't know, peaches are a safe fruit to give your dog! Just make sure to not give them the pit. So since we've had peaches on the regular, plus the Newman's Own O's, plus the ice cream... you get where I'm going here. Yes, Peaches 'n Cream Ice Cream Sundaes. And these are literally 3 ingredient Peaches 'n Cream Ice Cream Sundaes!
Tips for making the best Peaches 'n Cream Ice Cream Sundaes
• Use ripe peaches! There is nothing worse than fruit that is not ripe. Allow your peaches to sit out on the counter for a couple days if they are not ripe when you buy them. Peaches are ripe when they are both firm and soft. When you press into them they should be slightly soft, that is when they are at their peak.
• Use the best vanilla bean ice cream, Straus! I think I made my point above. But I cannot stress enough how amazing their vanilla bean ice cream is! It is so good! When you're making an ice cream sundae, the ice cream is the start of the recipe. So, you should splurge and get the best ice cream.
• You can use any kind of vanilla flavored cookie for this ice cream sundae and it will still be delicious. You can make your own or buy them. But, I do recommend buying organic cookies as they will taste the best!
Why use organic ingredients in Peaches 'n Cream Ince Cream Sundaes? You all know I'm a huge organic advocate, and I bet you may be thinking sometimes, Why would I even bother to use organic ingredients in something that is so sweet and indulgent? But, that is the exact reason why you should use organic ingredients! Sweet things need do have flavor in order to be good, otherwise they are just sweet and they don't taste like much else. Organic ingredients are more pure than conventional ones, therefore they actually have more flavor than the non organic options. Say it with me, organic means more flavor! And not just more flavor but a more true and pure flavor.
So, I highly recommend that you buy the best organic ingredients for these amazing Peaches 'n Cream Ice Cream Sundaes! You can also shop my Amazon Storefront for all my favorite organic ingredients here.
