Snowy Snack Mix

Looking for something fun to snack on for a Holiday Party? Or even if you just want to have some snacks out if you have guests staying with you this holiday season. This Snowy Snack Mix is perfect and it can be made all winter long. I went with a white theme here for this, which I think looks just adorable! This Snowy Snack Mix is made up of White Chocolate Pretzels, Vanilla Bean Marshmallows, Almonds, White Chocolate Chips and Kettle Corn. It's sweet, salty and has something for everyone. You can even switch out the items for other things if you like. If you're gluten free, substitute the White Chocolate Pretzels for Banana Chips or Toasted Coconut. Happy snacking... 




Snowy Snack Mix

Makes 8 Quarts (32 cups)


White Chocolate Pretzels

283 grams (10 ounces) organic white chocolate, chopped into small pieces

5 ounces (1 2/3 cup) organic pretzels


Kettle Corn

142 grams (5 ounces) organic popcorn kernels

57 grams organic coconut oil

113 grams (1/2 cup) organic cane sugar

3 grams (1 teaspoon) fine sea salt


Extras

235 grams (1 3/4 cup) organic blanched slivered almonds

2 bags organic marshmallows (find here)

170 grams (1 cup) organic white chocolate chips


Method First, make the chocolate covered pretzels. Line a baking sheet with parchment paper. In a double boiler, melt 226 grams (8 ounces) of white chocolate until it reaches 100°F on a chocolate thermometer. Remove from heat and place on a bag of ice or frozen fruit to stop heating.

Add the remaining 57 grams (2 ounces) white chocolate and stir to combine completely. Allow temperature to reach 89°F on chocolate thermometer. Start dipping pretzels into white chocolate and placing on parchment paper. I ended up dumping all the pretzels into the white chocolate, stirring them and them dumping back onto the parchment paper instead of dipping each one individually. This can be a little rustic, because you’re just going to break them up and throw them in the mix. It saves a lot of time! Allow to set up in the fridge or freezer.

Next, make the kettle corn. In a pot with a lid, add the coconut oil and 3 kernels. Put over medium/high heat and make sure the lid is on. Let the kernels pop. Remove them from the pot and add the remaining kernels and return lid.

Heat the kernels alone for 1 minute. Then, sprinkle the sugar on top of the kernels and place the lid on top.

Swirl around shake the pop consistently so as the kernels are popping and you’re getting the popped corn off the bottom so it doesn’t burn. Wear oven mitts while doing this! As soon as the pops slow to 1 second between pops, remove from heat and dump immediately into a bowl.

Add the sea salt and shake/stir to combine completely. Let the Kettle Corn cool completely before assembling the mix.

Chop or use kitchen scissors and cut the marshmallows into tiny pieces.

Remove the White Chocolate Pretzels from the freezer and just break them up so it’s in pieces like bark.

In a giant bowl, or multiple bowls because this makes a lot of mix (think like 2 big party bowls). Add the Kettle Corn, marshmallow pieces, almonds, white chocolate pretzels and white chocolate chips. Stir or fold to combine completely so everything is mixed.

You can even package into cute little gift bags and gift for the holidays!
