White chocolate pretzels will always remind me of Christmas. My mom and I used to make them as part of our Holiday Cookie Boxes (more on that coming next post!) During our crazy Holiday Cookie Box making mayhem, pretzels some how found their way into our boxes. Sometimes we did white chocolate, sometimes milk chocolate - but the white chocolate ones were always my favorite. My mom was never really a baker - she was more of a cook. Which probably explains why she always had me microwaving tiny glass dishes of chocolate (30 seconds at at time, so not to burn the chocolate). I never knew there was an easier way to melt and also temper chocolate! Had I known, I would have been doing it my whole life. I hated using tiny glass dishes for small amounts of chocolate in the microwave. Because those dishes pretty much always burned my hands because they got so hot, but if I used an oven mitt I’d usually drop it because the dish was so damn small and hard to hold onto with a big mitt. I have dropped many a tiny glass dishes full of chocolate in my lifetime and I am glad to say that part of my life is now over.
So if you know the method of microwaving chocolate and you dislike it like I used to, then you should be really happy about trying this way for chocolate covered pretzels! If you don’t have a chocolate thermometer, they are a great investment. I’ve linked the one that I have here, it’s just one click away on Amazon. You can also use it for so many other things besides chocolate, because it’s just a digital thermometer.
I decided to add peppermint flavor into the white chocolate to make these pretzels more festive. The little bit of peppermint flavor really goes well with the sweet white chocolate and the saltiness of the pretzels. Be careful, as these things are so delicious and so tiny you can eat so many without even realizing it! That’s what I did while making them yesterday! The best thing about this recipe is that it makes a bunch, which makes this a perfect holiday snack, addition to a holiday dessert table, or you can even wrap some up in cute holiday tins and gift them to friends and family.
White Chocolate Peppermint Pretzels
6 ounces organic small pretzel twists (I bought these here)
10 ounces (283 grams) organic white chocolate, finely chopped
1/4 teaspoon organic peppermint flavor (like Frontier Co-Op)
Method Line two baking sheets with parchment paper. Fill a medium pot half way with water. Put over high heat.
In a heat proof bowl, add about 80% of the white chocolate. Melt until it reaches 100°F on a chocolate thermometer. Remove from heat.
Immediately add in the remaining 20% of white chocolate, stir vigorously to combine completely so it’s smooth.
Allow chocolate to reach temper, at 89°F. Then add in the peppermint flavor and stir to combine completely.
Dip half of each pretzel into the white chocolate, set on prepared baking sheets. Repeat until all the chocolate is gone.
Place baking sheets in the fridge to set, about 1 hour.
Store in a cool dry place, or in the fridge for up to 2 weeks.
Gluten Free – Just use gluten free pretzels!
Vegan – Replace the white chocolate with dairy free dark chocolate.
