There is nothing I love more than coconut and chocolate, so desserts with either of these or even both are something that I can't resist! I know everyone is probably thinking of buying Easter candy right now, but instead of buying that bad for you store bought candy - make these Chocolate Clusters instead! They are literally so easy and have just three ingredients - milk chocolate, coconut and almonds.
Chocolate Clusters | Makes 2 Dozen
- 283 g. (2 cups) organic milk chocolate, chopped
- 142 g. (1 2/3 cups) organic fine shredded unsweetened coconut
- 113 g. (2/3 cup) organic whole almonds
Line baking sheet with parchment paper.
In a double boiler, melt 226 g. (2 1/2 cups) of the milk chocolate until it reaches 110 degrees on a chocolate thermometer. Remove from heat.
Add in the remaining milk chocolate and stir to combine completely. Let chocolate reach 89 degrees on a chocolate thermometer.
Add the coconut and almonds into the milk chocolate and stir to coat them completely.
Using a regular kitchen spoon, drop them onto a baking sheet lined with parchment paper. Place in the fridge until they set.
Store in the fridge or in a cool dry place.
